Quick Veggie Pasta
- 1 16 oz. box penne pasta
- 1 can artichoke hearts, drained and chopped roughly
- 3 tablespoons virgin olive oil
- 1 tablespoon minced garlic
- 1 teaspoon red pepper flakes
- 2 cups shredded mozzarella or havarti cheese
- 1/4 cup pine nuts, browned in a dry skillet
- Work QUICKLY -- everything needs to be mixed while the pasta is hot so that the last item--the cheese-- will melt!
- Have everything prepared before you cook the pasta!!
- 1. boil the pasta until al dente
- 2. drain and coat pasta with olive oil
- 3. throw in artichokes, garlic, red pepper and browned pine nuts
- TOSS GENTLY BUT THOROUGHLY.
- 4. Quickly add the cheese and toss quickly.
- To aid in melting you can replace the lid to the pot--serve as soon as the cheese melts!!
