Stella'S Flapper Pie
- Topping
- 1 1/4 cups graham wafer crumbs
- 1/4 cup sugar
- 1/4 cup melted butter
- 1/2 tsp ground cinammon
- Filling
- 1/2 cup sugar
- 1/4 tsp salt
- 2 tblsp cornstarch
- 1 tbls flour
- 2 cups milk
- 2 large egg yolks (beaten)
- 1 tbsp butter
- 1 tsp vanilla
- Meringue
- 2 egg whites
- salt
- 1/4 cup sugar
- Mix topping together and bake for 8 minutes at 375 F
- Filling
- Add sugar, salt, cornstartch and flour. Gradually stir in milk until mixture is smooth. Cook over medium heat stirring constantly until it boils (about 2 minutes). Remove from heat and stir in a little hot mixture into the egg yolks then add yolks to mixture. Boil mixture for 1 minute, add butter and vanilla. Cool for 10 minutes.
- Meringue
- Beat 2 egg whites stiff. Add a pinch of salt while beating. Gradually add 1/4 cup sugar. Beat until stiff and glossy. Spread over pie. Sprinkle crumbs over top. Bake at 425 F for 5 minutes
