Hot Antipasto Poor Boys
- 1/4 c. creamy Italian dressing
- 2 Tbsp. grated Parmesan cheese
- 1 c. cherry tomatoes, cut into fourths
- 2 poor boy buns, split or 4 hot dog buns
- 1 (5 oz.) pkg. sliced pepperoni, cut up
- 1 (2 1/2 oz.) can sliced ripe olives, drained
- 1 (14 oz.) can artichoke hearts, drained and cut into fourths
- 1/4 c. shredded Mozzarella cheese
- Mix dressing and Parmesan in large bowl.
- Toss with tomatoes, artichokes, pepperoni and olives.
- Set oven to broil.
- Place buns, knived sides facing up, on ungreased cookie sheet.
- Broil with tops about 6 inches from heat until golden brown.
- Spoon pepperoni mixture onto buns.
- Sprinkle about 2 tablespoons Mozzarella over each.
- Broil until cheese is hot and bubbly.
