Millie'S Cheesecake
- CRUST:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 8 tablespoons sugar
- pinch of salt
- sift above together
- Add:
- 2 beaten eggs
- 1 stick butter melted
- FILLING:
- 2 8-oz. cream cheese, softened
- 16 tablespoons sugar
- 4 beaten eggs
- 2 tablespoons flour
- 1 quart whole milk
- 2 teaspoons vanilla
- Juice of one lemon.
- Pat the crust into a buttered 9x12" baking pan. (I have used a large springform as well, wrapping the outside in several layers of foil)
- For filling prep:
- Cream the cheese with the sugar, eggs & flour. Slowly mix in milk, then add the vanilla and lemon juice. Bake at 300 degrees for about 90 minutes--the filling will be a bit jiggly, but just a bit.
- Cool, sprinkle top w/cinnamon if desired. Serve chilled-wonderful with strawberries or any fresh fruit of your choice.
