Baked Scallops With Thyme And Chives
- 1.5 lbs. bay scallops
- 2 cloves garlic, pressed
- 4 Tbl. butter
- 1/4 cup flour
- 2 Tbl. chopped fresh chives
- 1 Tbl. fresh thyme leaves
- cooking sherry or white wine
- 1/2 cup crushed oyster crackers
- 2 Tbl. grated Parmesan cheese
- 2 Tbl. butter
- chive spears for garnish
- Preheat oven to 350 degrees.
- To prepare topping, melt 2 Tbl. butter and mix with crushed oyster crackers and Parmesan cheese. Set aside.
- Drain and rinse scallops. Melt 4 Tbl. butter and saute pressed garlic over medium low heat until garlic is cooked but not brown. Add flour to make a light roux. Toss flour mixture with scallops, thyme leaves and chopped chives. Place in 2-quart baking dish and add sherry or wine until scallops are nearly covered. Sprinkle topping over and bake for 20 minutes. Garnish with chive spears.
