Baked Scallops With Thyme And Chives

  1. Preheat oven to 350 degrees.
  2. To prepare topping, melt 2 Tbl. butter and mix with crushed oyster crackers and Parmesan cheese. Set aside.
  3. Drain and rinse scallops. Melt 4 Tbl. butter and saute pressed garlic over medium low heat until garlic is cooked but not brown. Add flour to make a light roux. Toss flour mixture with scallops, thyme leaves and chopped chives. Place in 2-quart baking dish and add sherry or wine until scallops are nearly covered. Sprinkle topping over and bake for 20 minutes. Garnish with chive spears.
