Sunshine Fruit Bars(Low-Fat)
- 1 1/2 c. Quaker Quick oats
- 1 c. flour
- 1/2 c. firmly packed brown sugar
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt (optional)
- 1 c. orange juice
- 1/4 c. canola or other vegetable oil
- 1/4 c. Egg Beaters or 2 egg whites
- 1 tsp. vanilla
- 1 (6 oz.) pkg. diced, dried mixed fruit (no nuts or coconut)
- 1/4 c. additional diced, dried apricots (enhances flavor)
- Heat oven to 375u0b0.
- Spray a 13 x 9-inch baking pan with nonstick cooking spray.
- Combine dry ingredients.
- Add juice, oil, egg product and vanilla.
- Mix well; stir in fruit.
- Spread into prepared pan.
- Sprinkle with 2 tablespoons of oats.
- Bake 20 to 22 minutes or until lightly browned and edges pull away from sides of pan.
- Cool completely.
- Cut into bars.
