Jay And Anna'S Chili
- 1 to 1 1/2 lb. hamburger
- 1 to 1 1/2 lb. ground sausage
- 1 1/2 Cups diced onion
- 1 large head garlic, minced
- 3 Tblsp. dried oregano, crushed
- 3 Tblsp. crushed red pepper flakes
- 3 to 3 1/2 Tblsp. cinnamon
- 2 Tblsp. Chili powder
- 2 Tblsp. sugar (white or brown)
- 1 (40 0z.) can Brooks Mild Chili Beans In Sauce
- 2 (15 1/2 oz.) cans Brooks Hot Chili Beans In Sauce
- 3 (10 oz.) cans Rotel Chili Fix-Ins (black label)
- 2 (15 oz.) can Hunts Seasoned Diced Tomatoes For Chili
- 2 (14.5 oz.) cans Red Gold Diced Tomatoes Chili Ready With Onions
- 1 (29 oz.) can Hunts Tomato Sauce
- 2 (6 oz.) cans Hunts Tomato Paste
- 6 Tblsp. fresh choppped oregano
- In very large stock pot (or the like) brown and crush up the hamburger, sausage, onion and garlic over med. to med.-hiogh heat.
- Add the dried oregano, pepper flakes, cinnamon, chili powder and sugar. Cook and stir for about 5 minutes.
- Add the following with all the sauces in the cans: All the beans, All the tomato mixes, the tomato sauce and the tomato paste. Stir and combine well.
- Bring to a boil. Cover and reduce heat to med.-low. Let simmer at least an hour - the more it simmers the better! If you simmer a while, you may need to add more liquid - see above in the introduction.
- About 5 minutes before serving, stir in the chopped fresh oregano.
- Be sure to pass bowls of shredded cheddar cheese, hot sauce, sour cream, crackers, green onions, black olives, diced white or yellow or red onions, chopped tomatoes, salsa, and/or guacamole, or whatever else your family likes! Crusty bread is a good way to "clean" the bowl after the chili is all gone.
- Don't forget the milk to soothe those taste buds!
