Easy Peach Cobler
- Topping
- 1/2 stick butter
- 1/2 cup sugar
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup peach juice from can
- 1/2 teaspoon almond extract
- Filling
- 1 stick butter
- 1/3 cup sugar
- 2 tablespoons flour
- 1/2 cup applejack, brandy, fruit juice or water
- 1 28 oz can lite sliced peaches drained and juices reserved
- 1/2 teaspoon almond extract, 1/2 teaspoon vanilla extract
- 1/8 teaspoon fresh grated nutmeg
- Filling
- melt butter and add flour, sugar and salt. mix well then add peaches and liquid. add extracts and heat through.
- Topping
- In a mixing bowl on low speed cream the sugar and butter. then add remaining ingredients and mix for about a minute. The batter should be about as thick as cake batter, add a little bit of milk or liquid if needed to thin it out
- Assembly
- Pour filling into 9 x 9 greased baking pan and place batter over the filling. Bake at 350 approx 1 hour until golden brown.
