Sweet Potato Hash Browns
- For the Sweet Potatoes
- 4 medium sized sweet potatoes (diced)
- Juice of 2 oranges
- 1/2 honey
- 1/2 sweet onion (diced)
- Cummin, nutmeg, salt and pepper to taste
- For the Beets
- 8 oz. diced beets
- 8 oz. crazins
- 1/3 bourbon
- 1/2 red wine
- 1/2 c. chopped peacans
- Coat Sweet Potatoes with small amount of olive oil and roast for 12 min. @ 400 F. Set aside
- Coat Beets with small amount of olive oil and roast for 20 minutes at 400 F. Set aside
- Combine Crazins/Bourbon and Red Wine in small sauce pan and reduce mixture to 1/3. Set aside.
- Roast peacans for 7 min. @ 350F. Set aside.
- In a small bowl combine orange juice and honey. Set aside.
- In a large olive oil coated skillet, brown onion.
- Add sweet potaotes and orange/honey mixture. Cook until slightly browned.
- Add beets, pecans and Crazins. Cook until warmed through (about 4 min.)
- Serve with Steak or Pork Chops
