Sweet Potato Hash Browns

  1. Coat Sweet Potatoes with small amount of olive oil and roast for 12 min. @ 400 F. Set aside
  2. Coat Beets with small amount of olive oil and roast for 20 minutes at 400 F. Set aside
  3. Combine Crazins/Bourbon and Red Wine in small sauce pan and reduce mixture to 1/3. Set aside.
  4. Roast peacans for 7 min. @ 350F. Set aside.
  5. In a small bowl combine orange juice and honey. Set aside.
  6. In a large olive oil coated skillet, brown onion.
  7. Add sweet potaotes and orange/honey mixture. Cook until slightly browned.
  8. Add beets, pecans and Crazins. Cook until warmed through (about 4 min.)
  9. Serve with Steak or Pork Chops
