Delightful Cheesecake

  1. Sprinkle 3 tablespoons graham cracker crumbs in 9-inch pan. Set aside.
  2. Soften gelatin in 1/2 cup water.
  3. Bring 3/4 cup juice to boil and stir in gelatin.
  4. Beat cottage cheese smooth.
  5. Add egg yolks, skim milk, lemon juice, sweetener, vanilla and salt.
  6. Beat well.
  7. Blend in gelatin at low speed.
  8. Chill.
  9. Stir occasionally until thick, but not set, about 1 hour.
  10. Beat egg whites until soft peaks form, then fold into gelatin mixture by hand.
  11. Spoon over crumbs in pan.
  12. Sprinkle remaining crumbs on top.
  13. Add pineapple tidbits on top.
  14. Chill overnight in refrigerator.
