Craving For More Blueberry Cake With Walnut Crust

  1. Crust:
  2. Preheat oven to 350 F. Finely grind walnuts in processor.
  3. Using electric mixer, beat butter, sugar, flour, egg yolkes and ground walnuts in a large bowl until mixture holds together. Butter 9 inch springform pan and transfer batter to the pan.
  4. Filling:
  5. Using clean dry beaters, beat 3 egg whites and a pinch of salt in a medium bowl until soft peaks form. Gradually add granulated sugar, beating until stiff but not dry. Mix blueberries with 2 tbs of flour and add into the egg whites mixture and toss gently. Spread berry mixture evenly on the walnut crust. Bake for 50 minutes and the top is golden brown. Cool and cut into wedges and serve.
