Tomato Cheese Pie
- 1 c. grated Cheddar cheese
- 1 c. grated Mozzarella cheese
- 1 c. drained cottage cheese
- 1/4 lb. fresh mushrooms, sliced and sauteed in 1 Tbsp. oleo
- 2 Tbsp. chopped onion
- 1/2 lb. lean ground beef, browned and drained
- 3 to 4 ripe tomatoes
- 1 Tbsp. fresh basil
- 1 Tbsp. fresh oregano
- 1/4 c. chopped green onions
- salt and pepper to taste
- 1 pie crust
- Pre-bake pie crust 10 to 15 minutes at 375u0b0.
- Prick bottom and sides with a fork to prevent shrinking.
- Combine first 6 ingredients and spoon into crust.
- Slice tomatoes into wedges and arrange over the filling in a tightly overlapping circular pattern.
- Sprinkle on the remaining ingredients.
- Bake at 325u0b0 for 20 minutes.
- Let stand 15 minutes before cutting.
