Turkey Manicotti
- 8 manicotti shells
- 1 lb. ground raw turkey
- 1 (15 1/2 oz.) jar chunky garden-style spaghetti sauce
- 1 beaten egg
- 1 c. Ricotta cheese
- 1 c. shredded Mozzarella cheese
- 1 c. sliced mushrooms
- 1/2 c. snipped parsley
- 1/4 c. grated Parmesan cheese
- 1 small onion, chopped
- 2 Tbsp. oregano
- 1/2 tsp. garlic salt
- 1/2 tsp. black pepper
- 1 bay leaf
- 1/4 tsp. onion powder
- Heat oven to 350u0b0.
- Cook manicotti in boiling water about 18 minutes or until tender but still firm.
- Drain and rinse well.
- In a large skillet, saute onion in a little margarine for 1 minute. Add turkey to onions and cook until no longer pink.
- In another pot, heat sauce.
- Add all the spices, the bay leaf and mushrooms. Heat through.
- Stir in turkey and onions.
- Mix together egg, Ricotta, Mozzarella, parsley and Parmesan in a separate bowl. Stuff cheese mixture into shells.
- Spoon 1/3 of the sauce mixture into a 12 x 7 1/2 x 2-inch baking dish.
- Place shells on top. Spoon the remaining sauce over the shells, covering them up. Bake, covered, for 25 to 30 minutes or until hot.
- Serves 4.
