Snowballs
- 1/2 cup (1 stick) butter
- 3 tbsp confectioners sugar
- 1 cup sifted flour
- 1 cup finely chopped pecans
- extra confectioners sugar
- 1. Cream butter and 3 tbsp. confectioners sugar until fluffy.
- 2. Stir in flour gradually
- 3. Add pecans until well blended.
- 4 Chill several hours or until firm to handle
- 5. Roll dough, teaspoon at a time, into marble-size balls between palms of hands.
- 6. Place 2 in. apart on ungreased cookie sheets
- 7. Bake in slow oven (325F) for 20 minutes or until lightly golden.
- 8. Cool on cookie sheets for 5 minutes.
- 9. Remove carefully and roll in extra confectioners sugar while still warm to make a generous white coating.
- 10. Cool completely on wire racks.
- 11. Store with waxed paper between layers in container with tight-fitting lid.
