Shrimp Captain Lewie
- 1 lb medium to large cooked cocktail shrimp
- 4 cloves Fresh Garlic (minced)
- 1 Can Chunked Pineapple
- 1/2 Jar Marachino Cherries
- 1 Cup Terryaki Sauce or 1/2 cup Glaze
- wooden skewers
- In Large freezer bag combine all ingrtedients except wooden skewers.
- Include 1/2 the can of pineapple juice and all of the 1/2 the jar of cherry juice.
- Gently shake up and marinade for at least 8 hours.
- Soak wooden skewers in water to avoid burning.
- Begin alternating Shrimp, Pineapple, and Cherries on skewers like a kabob.
- Grill quickly on high setting or a little longer on low setting. Pineapple should have a few charred ends.
- flip and cook other side. Cooking time is only about 3 minutes per side.
- You can serve right on the skewers or you can remove all of the ingredients from the skewer and serve over a bed of white rice. With a sprinkle of Soy sauce.
