Ginger Spice Cookies
- 2 cups flour
- 2 1/2 tsp ground ginger
- 2 teaspoons baking soda
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 3/4 tsp salt
- 3/4 c crystalized ginger
- 1 c dark brown sugar
- 1/2 veg shortening softened
- 1/4 c unsalted butter
- i large egg
- 1/4 c mild flabored molasses
- granulated sugar
- Combine flour, gr ginger, soda, cinnamon, cloves and salt. Mix in crystallized ginger. In a large bowl, beat brown sugar, shortening and butter until fluffy. Blend in egg and molasses. Add flour mixture and mix until blended. Cover refrigerate 1 hour.
- Preheat oven to 350. Butter 2 baking sheets, make balls and coat in sugar. Cook 12 minutes.
