Lasagne Roll-Ups
- 8 oz. lasagne noodles
- 16 oz. Ricotta cheese
- 2 eggs, beaten
- 1 (10 oz.) frozen spinach
- 2 c. shredded Mozzarella cheese
- 1 tsp. dried basil
- 1 tsp. dried marjoram
- 1 (32 oz.) jar prepared spaghetti sauce
- Cook lasagne noodles, drain and set aside.
- Thaw and squeeze dry spinach.
- In a medium bowl, blend Ricotta cheese, eggs, spinach and Mozzarella cheese; spread evenly on lasagne strips. Cut strips in half crosswise.
- Roll strips up jelly-roll style. Cut each roll in half.
- In a 15 x 10-inch baking dish (or two 8 or 9-inch baking dishes).
- Arrange roll-ups curled edges up; lay 3/4 sauce in pan and then spinach roll-ups.
- Add Parmesan cheese and rest of sauce.
- Cover with foil.
- Bake in a 350u0b0 oven until hot, 35 to 40 minutes.
