Hot Artichoke Dip
- 1 cup freshly grated Parmesan Cheese
- 1 14 oz can artichoke hearts, drained
- 1/2 cup cream cheese
- 1/2 cup mayonnaise
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice
- pinch of paprika
- 2 tablespoons shallots, finely minced
- 1/4 teaspoon salt
- ground black pepper to taste
- Preheat oven to 400F. Reserve 1 tablespoon of the cheese.
- Combine artichokes, cheeses, mayonnaise, garlic, lemon juice, and paprika in a food processor; pulse until smooth.
- Stir in shallots, salt and pepper.
- Spread the mixture into a sm/med shallow baking dish and sprinkle with reserved cheese. Bake until lightly browned and warmed through about 15-20 minutes. Serve warm with French bread slices.
