Chili
- 2 lbs. ground beef
- 1 tbsp cooking oil
- 3 garlic cloves minced
- 2 stalks celery chopped fine
- 2 lg. onions chopped fine
- 1 16oz. can of tomatoes
- 3 8oz. cans tomato sauce
- 1 tsp salt
- 1/2 tsp pepper
- 2 bay leaves
- 1 tbsp. plus 1 tsp. chili powder
- 1 sm. can green chile peppers minced
- 1 tsp. oregano
- 1/4 tsp. cumin
- 6 whole allspice
- 3 tbsp. sugar
- 1 can pinto beans undrained
- 1 can kidney beans undrained
- In heavy, deep pan, heat oil and brown meat well. Drain excess fat. Add garlic, celery, onions, and saute 10 min. Add tomatoes, spices, seasonings, chili peppers, sugar and beans. Bring to boil, reduce heat and simmer 1-11/2 hours until desired thickness. Stir often to prevent sticking.
