Spinach Lasagna Casserole
- No boiling lasagna noodles16 +
- 3 hard boiled eggs
- 2 pkg. frozen chopped spinach or 2 large bags fresh
- 1 whole large onion chopped fine
- 2 Tbl chopped pancetta
- 2 cloves garlic finely chopped
- 2 Tbl butter or oil
- 1/4 tsp nutmeg
- Salt and pepper
- Freshly grated nutmeg
- 1 container16 oz fresh ricotta
- 2 cups of grated Italian cheeses
- Salt and pepper and nutmeg
- Heat butter or oil in large pan ad onion and garlic and pancetta be careful not to let brown but cook on low for about 7 min ad your spinach cook until just wilted or heated through ad salt and pepper with nutmeg.
- Let cool stir in ricotta,spread a small
- amount of sauce in the buttered casserole dish add a single layer of lasagna noodles,top with a layer of spinach mixture,ad quartered eggs,
- another layer of noodles,then one more layer of mixture finish with a layer of noodles ad the rest of the sauce on top spread evenly finish with a generous amount of grated cheeses.
- Bake covered with foil for 25 min and uncover for 25 more min at 350
