Spiced Cranberries And Apples
- 1 cup fresh cranberries
- 1/4 cup light or dark brown sugar
- 2 tablespoon granulated sugar
- 1 teaspoon grated orange rind
- 1/2 cup orange juice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- Freshly grated nugmet, to taste
- 1/4 cup golden raisins
- 1/4 cup dark raisins
- 2 tablespoons Grand Marnier (optional)
- 2 large cooking apples, peeled, cored, quartered, then cut into thirds
- Set the oven at 325 degrees. Butter an 11-by-y inch baking dish or another dish with a 2-1/2 quart capacity.
- Combine all the ingredients in a large bowl. Stir and transfer to the prepared dish.
- Cook the mixture in the hot oven for 1-1/2 hours, stirring occasionally, or until all the fruit is tender and the mixture is dense and jam. Cool, then cover tightly and refrigerate until ready to serve.
