Salmon With Potatoes Gruyere
- 2 salmon filets
- 2 chopped scallions
- Fresh chopped ginger
- 1 chopped shallot
- Oyster sauce
- Dijon mustard
- Hoisin sauce
- Honey
- Soy sauce
- Brown sugar
- Sherry
- Rice vinegar
- Cream
- Skim milk
- Thyme
- Black pepper
- 2 grated potatoes
- Flour
- Grated gruyere
- Marinate salmon in scallion, ginger, shallots, oyster sauce, mustard, hoisin, honey, soy, brown sugar, sherry, and vinegar.
- While marinating, simmer cream, milk, thyme, and black pepper 13 minutes.
- Toss grated potatoes with flour and then stir into cream mixture.
- Bring to a boil and simmer 5 minutes.
- Transfer to a buttered baking dish and stir in cheese.
- Back in the bottom rack of the oven for 20 minutes at 400 degrees.
- Broil 5 minutes.
- Let stand for 10 minutes while salmon bakes.
