Sourdough Coffee Cake
- 2 1/2 c flour
- 3/4 t baking soda
- 3/4 t baking powder
- 1/2 t salt
- 1 c sourdough starter
- 3/4 c sugar
- 2/3 c oil
- 1/3 c sour cream or greek yogurt
- 3 eggs
- 2 t vanilla
- For fruit/jam variations:
- 1 C pureed bananas, jam or pumpkin
- increase flour to 3 cups, soda and baking powder to 1 teaspoon each and sugar to 1 cup
- -or-
- 1 cup chopped fruit
- Crumb topping
- 6 T melted butter
- 1 c flour
- 3 T brown sugar
- 3 T granulated sugar
- 1/4 t baking powder
- pinch salt
- 1/2 c nuts (optional)*
- Whisk dry ingredients together.
- Mix starter and sugar until combined, add oil until incorporated. Add eggs and vanilla, then sour cream. If using fruit or jam, stir into batter and then incorporate dry ingredients.
- Bake at 350 for 40-45 minutes until skewer comes out clean.
