Dinner In A Pie Plate

  1. Use a 10" pie plate. Place one chicken breast with bone and skin on it in the middle of the plate over a thin slice of onion (vidalia in season). Squeeze about 1 teas of lemon juice over it. Thinley slice a small stalk of celery. Slice 1-2 carrots into coins. Toss the celery and carrots together and place in a pile beside the chicken. Slice a medium size portabello mushroom and place in another pile beside the chicken. Cut 1/2 onion up in pieces and place in another pile beside the chicken. Peel 2 cloves garlic and leave whole and place under the neck of the chicken. Cut about 5 grape tomatoes in half, toss with fresh basil and place in pile beside the chicken. Pour small amount of honey over carrots. Pour small amount of balsamic vinegar over the onion and some on the mushroom and on the tomatoes. Can toss each pile of vegetable with any of your choice of fresh herbs. You want them under the vegetables so they don't burn. Peel and slice in 1/4 thick slices a potato. Stand the potatoes up along the edge of the pie place.
  2. Sprinkle everything with salt and freshly ground pepper and some dried thyme and oregano (especially the potatoes. Spray everything with olive oil.
  3. Its a good idea to spray the sides of the pie plate with the oil before placing the potatoes in the place. Stick in 425 degree oven and then turn down after about 15 minutes to 375. Should take about 35-45 minutes to cook. use a bulb baster to baste after first 15 minutes of cooking. Each person gets their own pie plate. Can use Broccoli instead of carrots and no celery.
