Coffee Banana Muffins
- 1 1/2 cup of flour
- 1/2 cup flax seed meal
- 1/4 dark brown sugar (packed)
- 1/4 Splenda sugar
- 1/2 tsp. of salt
- 2 tsp. of baking soda
- 3 tsp. of vegetable oil
- 1/2 mashed banana
- 1 cup of strong fresh brewed coffee
- 1/4 cup of labneh(a very thick yogurt)
- Less than 1/4 cup water
- **Preheat oven to 375
- 1. Sift together the dry ingredients (flour, flaxseed, brown sugar, splenda, salt, baking soda)into a large bowl
- 2. Put labneh and water into a separate bowl and mix water until smooth.
- 3. Add mashed banana, oil, and coffee into labneh/water mixture and mix until smooth.
- 4. Add wet ingredients to dry ingredients, stirring until all flour is wet. Do not over stir the batter, you want it to be lumpy.
- 5. Using an ice cream scoop add batter to greased muffin tins.
- 6. Bake for 25-30 minutes or until done.
