Barbecue Beans
- 1/2 lb. ground beef
- 1/2 lb. ground pork (can use all beef)
- 1 medium onion, chopped
- 1 (No. 2) can pork and beans
- 5 Tbsp. barbecue sauce
- 6 Tbsp. ketchup
- 1 or 2 Tbsp. brown sugar
- chili powder to taste
- 1 small bell pepper
- Brown meat and onion in a small amount of fat in a skillet. Add beans, barbecue sauce and ketchup.
- Also add brown sugar and chili powder, if used.
- Turn into a 2-quart casserole; sprinkle with chopped bell pepper and bake in a 350u0b0 oven until it bubbles all over.
- Sometimes I use a heavy iron skillet to brown the onions and meat.
- Add the chopped pepper also to this and combine everything; then simmer on top of stove, until heated through. Saves time and easier on cooling system in summer.
