Spinach Mini Quiches
- t beaten eggs
- t/4 bag diced spinach
- t/2 cup diced broccoli
- t/4 diced red pepper
- t/4 diced green pepper
- t/2 cup chopped mushrooms
- t/4 diced red onion
- t/2 cup milk
- t 1/4 cup grated cheese
- t tsp basil
- t tsp salt
- tature's Seasoning
- tini Pie Pastry's
- Preheat oven to 425F
- Combine everything but pastry's and 1/4 cup grated cheese. Fill pastries with mixture. Place on baking sheet. Top cups with grated cheese and bake for about 10-15 minutes; or until cheese is browned on top.
- Healthier Option:
- Use fake eggs instead
- Use skim milk
- Use low-fat cheese or skip the cheese
- Skip the salt and Nature's Seasoning
- Skip the pastries, instead spray inside of muffin tins and make frittatas instead
