Seafood Poppers

  1. preheat oven to 300 degrees
  2. hollow out peppers - be sure to get all the veins and seeds out
  3. coat peppers inside and out with olive oil
  4. peel and devein the shrimp - season with old bay seafood seasoning and fresh ground pepper if desired
  5. stuff a small piece of the cheese in the bottom of the pepper - followed by a seasoned shrimp - followed by a larger piece of cheese
  6. stand peppers up in a baking dish filled with rock salt - this keeps the melting cheese in the pepper
  7. drizzle a little olive oil on the tops of the stuffed peppers and bake in a slow oven for about 30 minutes.
