Seafood Poppers
- 24 -jalapeno peppers - large, fresh
- extra virgin olive oil - for coating peppers
- 1/2 pound monterey Jack cheese cut into small "stuffable" chunks
- 24 - medium shrimp
- old bay seafood seasoning
- rock salt
- preheat oven to 300 degrees
- hollow out peppers - be sure to get all the veins and seeds out
- coat peppers inside and out with olive oil
- peel and devein the shrimp - season with old bay seafood seasoning and fresh ground pepper if desired
- stuff a small piece of the cheese in the bottom of the pepper - followed by a seasoned shrimp - followed by a larger piece of cheese
- stand peppers up in a baking dish filled with rock salt - this keeps the melting cheese in the pepper
- drizzle a little olive oil on the tops of the stuffed peppers and bake in a slow oven for about 30 minutes.
