Spicy Pig'N'Greens

  1. Pre - Preparations:
  2. 1.)tnap off ends of green beans and break into 1 - 1 1/2 inch long segments, place in pot of water
  3. 2.)trind peppercorns (or chili's)
  4. 3.)tice spring onions
  5. 4.)tice Garlic
  6. Cooking:
  7. 1.)tBrown ground pork under low heat slowing adding one tablespoon of ground cumin and 2 tablespoons of soy sauce along with 1 tablespoon of Cornstarch. Once browned, drain run off into a bowl (put this to the side with a cloth over it, we will use part of it later.) Set to the side when done.
  8. 2.)toil green beans for 3-5 minutes on high, turn to low for another 6 minutes. (test green beans, should be slightly tender on the outside, with a light crunch in the middle. Set to the side when done.
  9. 3.)tBoil rice until tender and drain in strainer while rinsing under cold water (firms up the rice). Set to the side.
  10. 4.)tn a 1 inch deep sauce pan, mix in:
  11. a.t/8 cup of chili oil
  12. b.t clove of diced garlic
  13. c.t/2 of the diced scallions
  14. d.t tablespoon of cumin
  15. e.t/2 teaspoon of ground cinnamon
  16. f.t tablespoon of 5 spice
  17. g.t tablespoons soy sauce
  18. 5.)timmer on med heat for about 30 - 45 seconds, then toss in Bean sprouts.
  19. 6.)timmer and stir on high for 45 seconds or until bean sprouts begin to wilt.
  20. 7.)tse large wok or deep pan for the following:
  21. a.t/8 cup of chili oil
  22. b.t/4 cup of soy sauce
  23. c.t/4 cup of pork run off
  24. d.trowned port
  25. e.treen beans
  26. f.tice
  27. g.tontents of sauce pan (garlic / bean sprouts etc)
  28. h. Remaining Bean sprouts (fresh)
  29. 8.)ttir on high head for 3 to 5 minutes stirring up from the bottom.
  30. 9.)terve!
