Spicy Pig'N'Greens
- 1 bunch of Scallions (Spring Onions)
- 1 clove of garlic (fresh)
- 1/4 cup of Sichuan Peppercorns (can be substituted with 2 dried Thai Chili's)
- 1/4 cup of CHILI OIL (can use olive oil instead)
- 2 handfuls of Bean Sprouts (fresh)
- 1 lb ground pork
- 2 tablespoons of ground cumin
- 1/2 teaspoon of ground cinnamon
- 1 tablespoon 5 spice
- 1 lb of green beans (fresh whole)
- 1 tablespoon corn starch
- Soy Sauce
- 2 cups of rice
- Pre - Preparations:
- 1.)tnap off ends of green beans and break into 1 - 1 1/2 inch long segments, place in pot of water
- 2.)trind peppercorns (or chili's)
- 3.)tice spring onions
- 4.)tice Garlic
- Cooking:
- 1.)tBrown ground pork under low heat slowing adding one tablespoon of ground cumin and 2 tablespoons of soy sauce along with 1 tablespoon of Cornstarch. Once browned, drain run off into a bowl (put this to the side with a cloth over it, we will use part of it later.) Set to the side when done.
- 2.)toil green beans for 3-5 minutes on high, turn to low for another 6 minutes. (test green beans, should be slightly tender on the outside, with a light crunch in the middle. Set to the side when done.
- 3.)tBoil rice until tender and drain in strainer while rinsing under cold water (firms up the rice). Set to the side.
- 4.)tn a 1 inch deep sauce pan, mix in:
- a.t/8 cup of chili oil
- b.t clove of diced garlic
- c.t/2 of the diced scallions
- d.t tablespoon of cumin
- e.t/2 teaspoon of ground cinnamon
- f.t tablespoon of 5 spice
- g.t tablespoons soy sauce
- 5.)timmer on med heat for about 30 - 45 seconds, then toss in Bean sprouts.
- 6.)timmer and stir on high for 45 seconds or until bean sprouts begin to wilt.
- 7.)tse large wok or deep pan for the following:
- a.t/8 cup of chili oil
- b.t/4 cup of soy sauce
- c.t/4 cup of pork run off
- d.trowned port
- e.treen beans
- f.tice
- g.tontents of sauce pan (garlic / bean sprouts etc)
- h. Remaining Bean sprouts (fresh)
- 8.)ttir on high head for 3 to 5 minutes stirring up from the bottom.
