Japanese Fruit Cake
- 1 c. butter
- 4 c. sugar
- 3 c. plus 4 Tbsp. plain flour
- 4 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. cloves or allspice
- 1 tsp. nutmeg
- 1 c. sweet milk
- 6 eggs, separated
- 1 box seedless raisins
- 2 cans coconut
- 1 c. pecans
- 1 1/2 c. boiling water
- 2 lemons, peeled and cubed
- 2 oranges, peeled and cubed
- Cream butter and 2 cups sugar.
- Beat egg yolks and add to creamed mixture.
- Sift 3 cups flour with baking powder and spices; add alternately with milk.
- Add coconut, pecans and raisins which have been rolled in flour.
- Beat egg whites and add.
- Bake in moderate 350u0b0 oven about 30 minutes or until done.
- Make 4 layers. Cool cake.
