Cajun Rice With Prawns
- 8 Large Prawns, cooked
- 1 Pound brown rice, cooked
- 2 Tbsp Oil
- 1/2 Cup Onion, Chopped
- 1 Each Green, Red, and Yellow Bell Pepper, Chopped
- 1/2 Cup Sunflower Seeds
- 1/2 Cup Peanuts
- 1 Tsp Pal Prudhomme's Meat Magic Cajun Spice
- 1/2 Cup Ripe Olives, sliced
- Sliced Lemon for Garnish
- Sprigs of Fresh Parsley for Garnish
- Heat oil in a large skillet over medium heat. Add onions, peppers, seeds, and nuts. Cook for approximately 5 minutes, stirring occasionally. Add rice, cajun spices and olives. Stir to blend all ingredients. Continue to cook, stirring frequently, until rice is heated through.
- Put rice mixture on a large flat platter. Arrange cooked and heated seafood on top and garnish with lemon slices and fresh parsley.
