Chicken With Sun Dried Tomato And Pasta
- 3 T. sun dried tomatoes in oil
- 2 cloves of garlic, minced
- 1 3/4 cups chicken broth
- 1/4 dry white wine
- 1 t. italian seasonings
- 1/2 cup chopped brocolli
- 1 cup cooked chicken breast, shredded
- 1 1/2 cups cooked penne pasta
- 1 T. chopped fresh basil
- 1 T. shredded fresh parmasean
- 1/2 t. crushed red chili peppers
- Heat a large skillet over medium heat. Add sun-dried tomatoes and garlic. Saute until fragrant, about 1 minute.
- Add chicken broth through italian seasonings. Bring to a boil, then turn down to a simmer. Simmer for 15 minutes.
- Add brocolli, cover for 3 minutes or until brocolli is bright green. Add chicken and pasta, heat through.
- Sprinkle with basil, cheese and crushed red peppers.
