Chipotle Burgers With Guacamole And Goat Cheese
- 1 pound lean ground beef,
- 2 (or more to taste) canned chipotle peppers, finely chopped;
- salt and pepper to taste.
- For guacamole:
- 2 avacados,
- juice of 1/2 a lime,
- 2 (or to taste) serrano peppers, finely chopped;
- 1 small tomato, finely chopped;
- 1 Tablespoon chopped cilantro, finely chopped;
- 1/2 small red onion, finely chopped;
- 1 teaspoon ground cumin seeds,
- dash of garlic powder,
- salt to taste.
- 4 hamburger buns
- 4 oz. goat cheese (chevre)
- Prepare grill for medium heat. Mix together ground beef with chipotles, salt and pepper. Form into 4 patties.
- Mash avacados with the lime juice. Add the rest of the ingredients and mix well.
- Grill the burgers until medium rare. Toast the hamburger buns on the fire until lightly browned. Serve burgers with a dollop of guacamole and and ounce of goat cheese on top of them.
