Buttermilk Pecan Chicken
- 1/4 c. pecan halves
- cherry tomatoes
- 1/4 c. sesame seed
- 1/8 tsp. pepper
- 1 Tbsp. salt
- 1 Tbsp. paprika
- 1 c. pecans (ground)
- 1 c. flour
- 1 egg, beaten
- 1 c. buttermilk
- 1/2 c. butter, melted
- 1 to 2 lb. broiled fryer chicken
- Melt butter in dish.
- Mix buttermilk with egg in shallow dish.
- Mix flour, ground pecans, paprika, salt, pepper and sesame seed in another dish.
- Dip chicken in buttermilk mixture and then in flour mixture.
- Place chicken, skin side down, in melted butter, then turn to coat.
- Place pecan halves around chicken to bake in moderate oven at 350u0b0 for 1 3/4 hours or until chicken is golden brown.
- Garnish with tomatoes and parsley.
