Pork Barbecue
- pork loin roast
- 4 Tbsp. brown sugar
- 2 Tbsp. paprika
- 2 tsp. salt
- 2 tsp. dry mustard
- 1/2 tsp. chili powder
- 1/4 tsp. cayenne pepper
- 4 Tbsp. Worcestershire sauce
- 1/2 c. vinegar
- 2 c. tomato juice
- 1/2 c. ketchup
- 1 c. water
- Bake pork roast.
- While baking, prepare sauce.
- Mix remaining ingredients in a saucepan and simmer 15 minutes until thick.
- When roast has baked, cool long enough to handle.
- Then cut, chop and scrape all meat from bones.
- Place in roasting pan; cover with barbecue sauce until swimming.
- Bake at 325u0b0 for 1 to 1 1/2 hours. Stir and mash meat into shreds.
- (The longer it cooks, the better it shreds.)
- Add more sauce if necessary.
- Makes enough sauce for a large roast.
