Christmas Chocolate Balls
- 1 c. crunchy peanut butter
- 1 egg
- 1 Tbsp. melted butter
- 8 oz. pitted dates, cut fine
- 1 c. confectioners sugar
- 1 c. coconut
- 1 c. maraschino cherries, cut up and drained well
- 12 oz. chocolate chips
- 2 squares semi-sweet chocolate
- 1 (1-inch) square wax
- Combine peanut butter, egg, butter, dates, coconut and confectioners sugar in large bowl and mix thoroughly.
- If sticky, add more confectioners sugar.
- Shape in 1-inch balls and refrigerate while preparing chocolate for coating.
- Melt chocolate chips, semi-sweet chocolate and wax in top of a double boiler.
- Use spoon or fork and dip balls in melted chocolate.
- Place on foil to set.
- Store in a cool place in a covered container.
