Phaux Pho (Noodle Soup For The Desperate)
- 8 cups good beef broth
- 1 package of Thai noodles (or other Asian noodles)
- 3 cups or more baby bok choy, chopped (could substitute raw spinach)
- 1 raw filet mignon steak, sliced very thinly (easier if you freeze it for a few minutes)
- 3 or more green onions, chopped
- 3 cubes* frozen cilantro
- 2 cubes* frozen basil
- 2 cubes* frozen minced garlic
- small dash cinnamon
- salt & pepper to taste
- *note - the frozen cubes are from Trader Joe's and are great in a pinch when you don't have fresh.
- Bring the noodles to a boil separately in water to soften, then drain and keep separate. Bring the broth to a boil, add the herbs/spices and let simmer a few minutes. Bring back to soft boil and add vegetable and beef. Separate into bowls and add the noodles. Great topped with fresh cilantro, lime juice, scallions, etc. NOTE, I believe this dish is more authentically prepared when the meat is added to the individual serving bowls and allowed to cook that way (in addition to using all the missing ingredients and cooking the broth from scratch).
