Coconut Curry Sauce
- Brown Onions, Julienne x 8.
- Lemon Grass x 6
- Coriander, Bunch x 2.
- Green Curry Paste tub x 2
- Spinach leaf's, Washed x 1 box
- Coconut Cream, Tinned x 12
- Water x 500 ml
- Desiccated Coconut x 4 good handful's
- Salt x 2 Tbls
- Sesame Oil x 50ml
- 1.Do "Mise en place".
- 2.Slice Onions, smash Lemon grass and chop the coriander. Heat oil in pot and combine in the above in to hot oil and sweat off.
- 3.Add paste and cook out or 2 minutes.
- 4.Add coconut cream and water. Bring to the boil.
- 5.Remove from heat Add decasinated coconut to thicken.
- 6.Combine the spinach into pot with wooden spoon and salt to taste. Allow cooling.
- 7.When cooled, remove the lemongrass & discard.
- 8.Decant into jugs, day dot lid & F.I.F.O. into the cool room.
- Time Frame Prep time: 30 - 40 Min's
