Grandmother'S Irish Soda Bread
- 4 c. sifted flour
- 1/4 c. sugar
- 1 tsp. salt
- 1 1/2 tsp. baking powder
- 1/3 c. shortening
- 1 1/3 c. buttermilk
- 1 egg
- 1 tsp. baking soda
- 1 Tbsp. caraway seed
- 1 c. raisins
- In a bowl, sift the flour, sugar, salt and baking powder.
- Mix in caraway seed.
- With a pastry blender or knife, cut in shortening to the consistency of cornmeal.
- Add raisins.
- Stir in combined buttermilk, egg and soda.
- Mix until just moistened. Turn out on a lightly floured board and knead gently until smooth. Form a round loaf.
- Place dough in a well-greased pan.
- Cut a cross about 1/2 inch deep.
- Bake until golden at 375u0b0, 1 hour or longer.
- Smother the outside of the loaf with butter or margarine while still hot to give it extra flavor.
- Yield:
- 1 round loaf.
