Riley'S Favorite Cranberry Sauce
- 2 , reserve 1/3 bag bags cranberries
- 1 1/2 cups orange juice
- 4 tablespoon pure vanilla extract
- 2 vanilla beans, split and scraped
- 3/4-1 cups sugar to taste
- pinch pinch salt
- 1/4 teaspoon mace
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon ground cinnamon
- 4 sticks cinnamon sticks
- Put 1 2/3 bag cranberries in saucepan with orange juice, cinnamon sticks, vanilla extract, sugar. Mix and cook until popping noise starts and the cranberries start to break down and become saucy. Stir in vanilla beans (discard pods), pinch of salt, mace, cardamom, and ground cinnamon. Cook apprx. 5 minutes more. Add the reserved 1/3 bag of cranberries and cook about 5 minutes more. Since I don't really measure, I would taste and adjust as you go along.
