Oatmeal Cake
- 1 c. Quick oats
- 1 stick butter
- 1 1/4 c. boiling water
- 1 c. sugar
- 2 beaten eggs
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1 c. brown sugar
- 1 1/2 c. regular flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 6 Tbsp. butter
- 1/2 c. sugar
- 1/4 can evaporated milk
- 1 1/2 tsp. vanilla
- 1 c. pecans
- 1 c. coconut
- Mix the first 3 ingredients together and let stand a full 20 minutes.
- Combine the next 9 ingredients with oatmeal mixture. Bake in a 9 x 13-inch pan at 325u0b0 for 35 minutes.
- While cake is baking, combine butter, sugar, milk and vanilla.
- Combine in saucepan over medium heat.
- Beat until butter melts and sugar dissolves.
- Add 1 cup pecans and 1 cup coconut.
- Spread over cake. Put back into oven until coconut browns slightly.
