Sweet Potato Pancakes
- 1 cup all purpose flour
- 3/4 cup whole wheat flour
- 1 T double acting baking powder
- 2 T turbinado sugar
- 1 t salt
- 2 t cinnamon
- 1 t allspice
- 2 cups milk
- 1 cup cooked sweet potatoes, mashed
- 2 large eggs, beaten lightly
- 1 1/2 t vanilla
- 1/4 cup vegetable oil or melted butter
- Maple syrup, honey, or fresh fruit as an accompaniment
- In a large bowl, stir together the flours, the baking powder, sugar, salt, cinnamon and allspice.
- In a seperate bowl stir together the milk, sweet potatoes, eggs, vanilla and oil (or butter).
- Stir the wet into the dry, stirring until it is combined well.
- Heat a greased griddle over moderate heat until it's hot enough to make drops of water scatter over its surface.
- Working in batches, pour the batter onto the griddle by 1/4 cup measures, cook the pancakes for 2 minutes on each side, or until they are golden and cooked through.
- Transfer them to a heated platter.
- Serve the pancakes with maple syrup, honey or fruit.
- Makes about 24 pancakes.
