Sweet Potato Pancakes

  1. In a large bowl, stir together the flours, the baking powder, sugar, salt, cinnamon and allspice.
  2. In a seperate bowl stir together the milk, sweet potatoes, eggs, vanilla and oil (or butter).
  3. Stir the wet into the dry, stirring until it is combined well.
  4. Heat a greased griddle over moderate heat until it's hot enough to make drops of water scatter over its surface.
  5. Working in batches, pour the batter onto the griddle by 1/4 cup measures, cook the pancakes for 2 minutes on each side, or until they are golden and cooked through.
  6. Transfer them to a heated platter.
  7. Serve the pancakes with maple syrup, honey or fruit.
  8. Makes about 24 pancakes.
