Goat Cheese And Mushroom Pate
- 1 and 1/2 TBSP Butter
- 1/2 Bulb Garlic minced
- 1 shallot minced
- 3 cups portobello mushroom chopped
- 1/2 cup of fresh herbs (parsley, cilantro, rosemary, basil, sage)
- Salt and pepper
- 250-300 grams goat cheese
- 4 fresh roma tomatoes, sliced.
- Melt butter on med-high heat, add minced garlic and shallot.
- Saute for 2 mins. Add chopped mushies.
- Saute for 5-7 mins. Transfer to a bowl and stir in chopped fresh herbs.
- Put goat cheese in a large mixing bowl and soften by pressing a ladle against the goat and the bowl. Add mushie mixture.
- Place on plastic wrap, length-wise and roll wrap around it. Chill for 20 mins.
- Form into whatever shape you want and put some fresh parsley on the outside! Serve with Crackers and fresh tomatoes.
