Company Casserole
- 1 lb. ground beef
- 2 Tbsp. oil
- 1 medium onion (optional)
- 2 c. tomato juice or canned tomatoes
- 1 Tbsp. catsup (or more)
- 1 Tbsp. steak sauce or Worcestershire
- 1/4 c. chopped green pepper or 2 Tbsp. chopped celery
- 2 Tbsp. parsley or 1 tsp. oregano (use both if desired)
- salt and pepper
- 1 to 1 1/2 c. cooked elbow macaroni
- 1 can cream of mushroom soup
- 1 c. grated Cheddar
- Cook onion and pepper until transparent in the oil.
- Add meat and cook until it is browned.
- Add tomatoes and seasonings and let simmer 1 to 2 hours.
- Cook macaroni and drain.
- Add to meat mixture.
- Stir in soup and pour in casserole.
- Top with cheese. Bake at 350u0b0 for about 30 minutes.
