Stuff-It
- 3 green onions, chopped
- 1 medium white onion, chopped
- 3 celery stalks, chopped
- 1/2 c. butter or margarine, melted
- 1 lb. crabmeat
- 1/2 c. seasoned bread crumbs
- 1/2 tsp. paprika
- salt and pepper to taste
- 2 Tbsp. lemon juice
- 1 lb. shrimp, peeled, cooked and chopped
- 1 egg
- Saute green onions, white onion and celery in butter.
- Add crabmeat, stirring constantly.
- Add bread crumbs, paprika, salt, pepper and lemon juice.
- Stir.
- Add shrimp and beaten egg.
- The egg holds the mixture together.
- If too loose, add more bread crumbs.
- Never cover the mixture.
- This can be served in individual ramekins garnished with a lemon wedge or as an entree used as stuffing for shrimp or fish.
- Freeze in patties and thaw as needed.
