Annie'S Wings
- 3 lbs. chicken wings, separated
- enough beer to cover
- 3/4 cup soy
- 1/2 cup honey
- 4 fresh cloves garlic/ smashed
- 1 teaspoon 5 spice powder (minimum)
- 2 tablespoons maple syrup
- 1 dash Tabasco (hot sauce)
- 1 healthy ounce Jack Daniels (or any bourbon)
- 2 teaspoons brown sugar ( I use dark)
- 1/4 cup scallions
- Separate chicken wings keeping tips for stock.
- Put in container and cover with beer for at least 3 hours
- Take all the remaining ingredients ( except the scallions) and mix. Pour the marinade over the chicken wing and marinate turning several time for at least 3 hours. Fire up the grill. I am a purist and use charcoal lit with a chimney. I cook them using the indirect method for approximately 60 to 75 minutes. I set the simmered marinade to the side that people can dip in---along with a sour cream dip I make. Place the chooped scallions over the wings and you have a tasty little dish with a neat presentation.
