  1. Separate chicken wings keeping tips for stock.
  2. Put in container and cover with beer for at least 3 hours
  3. Take all the remaining ingredients ( except the scallions) and mix. Pour the marinade over the chicken wing and marinate turning several time for at least 3 hours. Fire up the grill. I am a purist and use charcoal lit with a chimney. I cook them using the indirect method for approximately 60 to 75 minutes. I set the simmered marinade to the side that people can dip in---along with a sour cream dip I make. Place the chooped scallions over the wings and you have a tasty little dish with a neat presentation.
