Carrots With Porcini
- 2 oz. dried porcini
- 1 1/2 lbs. sweet carrots
- 5 tbsp. unsalted butter
- 1/2 medium onion, finely diced
- 2 garlic cloves, chopped
- salt & pepper, to taste
- 3 tbsp. Italian parsley, chopped
- Soak the porcini in warm water to cover. After 20 minutes remove and rinse under cold water, removing any grit. Cut into strips.
- Meanwhile, peel carrots and cut into julienne strips.
- Melt butter in a medium and sautee the onions on low heat until golden. Add the garlic and cook for 1-2 minutes longer. Add carrots and sliced porcini and toss in the butter mixture. Add salt & pepper to taste and cook for a few minutes over low heat. Add about 4 tbsp. of water, cover pan and cook until tender - about 20 minutes. When the water is evaporated and carrots are tender, add parsleyand heat through. Serve immediately.
