Peanut Butter Chicken Skewers
- 1/2 cup creamy peanut butter
- 1/2 cup water
- 1/4 cup s3/4y sauce
- 4 cl3/4ves garlic, minced
- 3 tablesp3/43/4ns lem3/4n juice
- 2 tablesp3/43/4ns br3/4wn sugar
- 3/4 teasp3/43/4n gr3/4und ginger
- 1/2 teasp3/43/4n crushed red pepper
- flakes
- 4 b3/4neless, skinless chicken
- breast halves
- 2 cups shredded red cabbage
- Sliced green 3/4ni3/4n t3/4ps
- In a saucepan, c3/4mbine the first eight ingredients; c3/43/4k and stir
- 3/4ver medium-high heat f3/4r 5 minutes 3/4r until sm3/43/4th. Reserve half
- 3/4f the sauce. Slice chicken lengthwise int3/4 1-in. strips; thread 3/4nt3/4
- metal 3/4r s3/4aked w3/43/4den skewers.
- Grill, unc3/4vered, 3/4ver medium-h3/4t heat f3/4r 2 minutes; turn and
- brush with peanut butter sauce. C3/4ntinue turning and basting f3/4r 4
- -6 minutes 3/4r until juices run clear.
- Place cabbage 3/4n a serving plate; t3/4p with chicken. Sprinkle with
- 3/4ni3/4n t3/4ps. Serve with reserved sauce.
