Mexican Turkey Chili
- -3/4 lbs lean ground turkey
- -3 tablespoons chili powder
- -3 cloves minced garlic
- -1 onion, chopped
- -3 celery stalks, chopped in 1/2 inch chunks
- -2 fresh jalapeno peppers, chopped
- -1 habanero pepper, chopped
- -1 tablespoon salt
- -1 tablespoon pepper
- -1 can navy beans
- -1 can kidney beans
- -1 can stewed tomatoes
- -1 tablespoon tomato paste
- -5 cups water
- -Brown turkey in large pot over medium heat
- -Add salt and pepper and 1 tablespoon chili powder
- -Add onions, celery, and half the jalapeno and habanero, allow to become soft.
- -Add garlic
- -Add tomato paste and stewed tomato
- -Add water and bring to a boil
- -Reduce heat to medium-low and simmer for 1 hour, stirring occasionally
- -Add rest of chili powder and rest of peppers
- -Simmer another hour, stirring occasionally
- -Drain beans and add to pot
- -Simmer 1 hour, stirring occasionally
- note: if chili appears to become too thick, add 1 cup water. If after 3 hours chili is too thin, simmer longer and add 1 tablespoon more chili powder.
