Carrot Cake (Cooking Light)

  1. Preheat oven to 350 degrees
  2. Combine lour and next 5 ingredients. Make a well in center.
  3. Combine apple butter and next 4 ingredients in large bowl. Stir with whisk. Add to flour mixture, stirring until just mixed in. Fold in carrots.
  4. Pour batter into 2 8-inch baking pans coated wiht cooking spray. bake at 350 for 35 minutes or until toothpick comes clean. Cooll 10 minutes on racks.
  5. Frost cake layers.
